Why Pizza is the Universal Comfort Food: A History

From the streets of Naples to the suburbs of New York and the bustling cities of Seoul, pizza has become the world's most recognizable and beloved comfort food. But how did a simple flatbread from southern Italy conquer the world?

Humble Beginnings in Naples

The origins of modern pizza date back to the late 18th and early 19th centuries in Naples, Italy. At the time, Naples was one of the largest cities in Europe, and it had a large population of poor workers (the lazzaroni). These workers needed food that was cheap and could be eaten quickly. Pizza—flatbread with various toppings, eaten for any meal—fit the bill perfectly.

The Legend of Margherita

The most famous story in pizza history is that of Queen Margherita of Savoy. In 1889, she and King Umberto I visited Naples. Legend has it that they were bored with the French cuisine they were served and requested pizza from the city's most famous pizzaiolo, Raffaele Esposito. He created three varieties, and the Queen's favorite was the one topped with tomatoes, mozzarella, and basil (representing the colors of the Italian flag). This variety became known as the Margherita.

The Global Expansion

The real global spread of pizza began with Italian immigrants moving to the United States in the late 19th and early 20th centuries. The first pizzeria in America, Lombardi's, opened in New York City in 1905. After World War II, returning American soldiers who had eaten pizza in Italy helped boost its popularity, leading to the creation of the various styles we know today: New York style, Chicago deep dish, and Neapolitan.

Why is it so Popular?

The secret to pizza's success lies in its versatility. It can be a simple, light snack or a heavy, indulgent meal. The combination of savory fats (cheese), acidity (tomatoes), and carbohydrates (crust) hits the "bliss point" that many humans are biologically wired to crave. Furthermore, its ability to adapt to local tastes—like adding sweet corn or bulgogi in Korea—makes it truly universal.
